“Mom! What’s for supper?” Those words often came from the mouths of my oldest boys before they sat down to breakfast–and they weren’t even teenagers at the time! Early on, I started posting the week’s menu on a white board in the kitchen, making it easy for me to answer that question without thinking. One of our favorite side dishes is Parmesan Potatoes.
Perfect with a Crock Pot Meal
Since these need to bake in the oven, it’s best to prepare them with a crock pot meal, or something made on the stovetop. I usually start about an hour before I want to get them on the table (because I’m often distracted when I’m working in the kitchen).
Simple to Make
First, peel and slice three large baking potatoes and place them into cold water. Next, after all the potatoes are sliced and soaking, prepare the pans. Put equal amounts of butter and oil (about a tablespoon or more of each, depending on your pan size) on each of two baking sheets and place those into the oven. Set the oven at 375F and allow it to preheat. Keep an eye on this so the butter doesn’t burn! Once the butter is melted, use oven mitts to remove the sheets from the oven. Tilt them to evenly distribute the butter and oil over the bottom of the sheets.
Finally, drain the potatoes and lay them in a single layer on each of the baking sheets. Once they’re all laid out, flip them over and sprinkle with a touch of salt and pepper, and then a layer of Parmesan cheese. Pop them into the oven and allow them to bake until fork-tender (about 20-30 min, depending on how thick you sliced them).
My family loves these potatoes–we never have leftovers!
Yield 6-8 servings
These crispy, yet soft, Parmesan potatoes make a great side dish for a crock pot meal.
- 3 large baking potatoes
- Large bowl of cold water
- 4 tablespoons butter, divided
- 4 tablespoons oil, divided
- Salt and pepper to taste
- Parmesan cheese to taste
Peel and slice potatoes; place into cold water. After all potatoes sliced and soaking in cold water, divide butter and oil equally between two baking sheets; place into oven and preheat to 375F. (Keep an eye on this so butter doesn't burn!) Once butter is melted, use oven mitts to remove sheets from over and tilt to evenly distribute butter and oil on pan. Drain the potatoes; lay in a single layer on each of the baking sheets. Once all laid out, carefully flip over and sprinkle with salt and pepper, then Parmesan cheese. Return baking sheets to oven and bake until fork-tender (about 20-30 min, depending on thickness).
